Chillish® Cheese Straws with Sesame seeds
Chillish® and Cheese are a match made in heaven. Throw in some puff pastry and you have one of the most decadent, dreamy and delicious works of art. The Chillish® addition to this timeless classic, works beautifully.
This recipe makes approx. 6 Straws.
Ingredients:
320g ready rolled pastry
100g Sussex Charmer Cheese
3 tbsp Chillish® Gubbins (well drained)
2 tbsp black & white Sesame seeds
50g Parmesan
1 tbsp. plain flour (for dusting)
1 beaten egg (to glaze)
Chopped Parsley (Garnish)
Method:
- Preheat the oven to 200C/fan180C/Gas 6. Line a large oven tray with parchment/baking paper.
- On a well floured surface, roll out the pastry into a long oblong. When it is approx. 3mm thick, cut it down the middle (in to two equal pieces).
- Using the back of a spoon, smear the Gubbins all over one of the squares, then sprinkle the Sussex Charmer Cheese and 30g of Parmesan on top, followed by a generous sprinkle of Sesame seeds.
- Next, carefully place the other square over the top. Lightly pressing down, trim the edges to get a smooth and equal shape.
- Using a very sharp knife, slice the ‘pastry sandwich’ into strips (approximately 2cm wide).
- Holding the ends of each strip, twist the pastry until you have a corkscrew shape. Place on a baking tray.
- Lightly brush with a beaten egg and sprinkle another generous tablespoon of sesame seeds and the remaining Parmesan over the top. Place in the oven for 8-10 minutes, until they are golden brown.
- Garnish with Chopped Parsley
Chillish® & Sussex Charmer Bites
These are quite simply, delicious. Sussex Charmer is a wonderful match as it is smooth enough not to overpower the rich flavors of Chillish®, yet it is creamy and decadent.
These are quick to make and you can substitute the bread for mini French stick slices or a gluten/wheat free alternative.
This recipe makes between 15 – 20 depending on how many discs each slice of sourdough gives you.
Ingredients:
½ tsp Chillish® Gubbins per Canape
50g Sussex Charmer Cheese (grated)
A good quality Sourdough loaf (sliced)
Chives (to garnish)
Black Pepper
You will need: A cookie cutter (or a Champagne glass)
Method:
- Preheat the Grill to 200c.
- In batches, toast five slices of Sourdough bread. When nicely toasted and firm, place on a chopping board and cut as many discs as you can. Place these on a baking tray.
- Place ½ a teaspoon of well-drained Gubbins on each bread disc, then lightly sprinkle with Sussex Charmer Cheese.
- Place under the grill for 1 minute, until the cheese has melted.
- Serve hot, on a platter with a few generous crunches of black pepper and any remaining grated cheese.
- Garnish with a few strands of Chive.
Golden Roasted Garlish® Baby Potatoes with Chives and Parsley
This quick recipe is very easy and incredibly delicious. These could be serves with any main meal, but work especially well with salmon.
Serves 2 people.
Ingredients:
3 tbsp Garlish® Oil
650g New potatoes (Baby Charlottes are a great choice)
2 tbsp Garlish® Crush
A Large handful of Chives (finely chopped)
A Large handful of Parsley (finely chopped)
3 tsp Salt
Black pepper to taste
Method:
- Preheat the oven to 160C/140C Fan/Gas 3
- Boil the potatoes in salted water for 8 minutes, then drain.
- In a large oven tray, add the potatoes and Garlish® Oil. Add the salt and pepper and mix together well.
- Put at the top of the oven for approx. 60 minutes until they are golden and roasted.
- Before serving, stir in the Garlish® Crush, Parsley and Chives.
Note – If you have any left over, they make a delicious ‘loose’ Bubble & Squeak, when mixed with cooked green cabbage and fried.
